Raspberry Daiquiri

I absolutely love frozen cocktails, and this raspberry daiquiri recipe is high up on my list. It has the perfect balance of tart and sweet and is so refreshing.

The best part is that this drink is just as delicious as it is easy to make! All you need are some frozen raspberries, zesty lime juice, white rum, and a splash of my raspberry simple syrup recipe.

What is Raspberry Simple Syrup?

I wanted to pack this drink with as much raspberry flavor as possible, so I like to use a raspberry simple syrup to give it just a hint of sweetness.

Simple syrup is usually made with equal parts water and sugar. The mixture is heated to help the sugar dissolve, which yields a sweet syrup that can be used to sweeten and flavor just about anything!

This recipe makes a raspberry simple syrup by adding in raspberries. The raspberries pack this syrup with flavor and give it a beautiful red color.

How Do You Make Raspberry Simple Syrup?

I love making my own simple syrup because it seriously takes less than 10 minutes to make!

Pour 1/4 cup of water into a small saucepan. Heat over medium-high heat until the water begins to boil.

Add in 1/4 cup of granulated sugar and stir continuously until the sugar is fully dissolved.

Add in the raspberries and turn the heat down to low and let the mixture simmer for about 5 minutes.

Then remove from heat and pour the mixture through a fine-mesh sieve into a separate container. Cool to room temperature, then cover and set aside.

How Do You Store Raspberry Simple Syrup?

This syrup can be made in advance or leftovers can be stored in an airtight container in the fridge for up to 2 weeks. It can also be frozen for up to a month.

I usually keep mine in a mason jar, but any container with a good lid should work just fine.

How To Make A Raspberry Daiquiri

Now onto how we make these delicious raspberry daiquiris!! They come together in a flash thanks to the help of a blender.

All you have to do is add frozen raspberries, white rum, raspberry simple syrup, and lime juice into a blender. If you don’t have a blender, you can also use a food processor.

Blend the mixture until it’s smooth. This usually takes me about a minute.

Pour the raspberry daiquiris into two margarita glasses. Garnish the glass with a lime wedge then enjoy!

What Glass Should I Use for These Frozen Raspberry Daiquiris?

Glasses are to cocktails as buttercream is to cake- it’s all about finding the right match!

For this raspberry daiquiri recipe, I’m using a margarita glass.

A classic daiquiri is normally served in a coup glass but for this frozen treat, a margarita glass felt more fitting.

If you don’t have a margarita glass, you can use a highball glass!

How Should I Garnish This Drink?

I like to garnish this raspberry daiquiri with a slice of lime!

Feel free to get wild with your garnishes and make it as fun as you want!

Raspberry Daiquiri – Ingredients & Substitutions

  • Frozen Raspberries – I love using frozen raspberries but you can use fresh raspberries if you prefer! But do note that it will change the consistency of the drink.
  • White Rum – I use white rum for its sweet but neutral flavor, but if you don’t have any you can substitute gin or brandy.
  • Lime Juice – Fresh lime is the key to bringing out the fresh, fruity flavor of this drink! Fresh is always best but bottled is a great substitute.
  • Raspberry Simple Syrup – You can also use regular simple syrup or omit the simple syrup altogether to make less sweet raspberry daiquiris.
  • Lime Wedge- There are so many fun ways to garnish drinks so please get creative with it and make it your own!

Ingredients

Raspberry Simple Syrup

  • 1/4 cup water (60g)
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup raspberries, fresh or frozen (30g)

Raspberry Daiquiri

  • 3 cups frozen raspberries (375g)
  • 6 oz. white rum
  • 2 oz. raspberry simple syrup
  • 2 oz. lime juice

Garnish

  • Lime Wedge

Instructions

Raspberry Simple Syrup

  1. Pour 1/4 cup of water into a small saucepan. Heat over medium-high heat until the water begins to boil.
  2. Add in 1/4 cup of granulated sugar and stir continuously until the sugar is fully dissolved.
  3. Add in 1/4 cup raspberries and turn the heat down to low and let the mixture simmer for about 5 minutes.
  4. Pour the mixture through a fine-mesh sieve into a small bowl to cool to room temperature, then cover and set aside.
  5. If you're making this in advance, it can be stored in an airtight container in the fridge for up to 2 weeks. 

Raspberry Daiquiri

  1. In a blender or food processor, add 3 cups frozen raspberries, 6 oz. white rum, 2 oz. raspberry simple syrup, and 2 oz. lime juice.
  2. Blend until smooth (this usually takes me about 1 minute).
  3. Pour into a tall glass like a hurricane glass or a margarita glass. Garnish with a lime wedge and enjoy!

Making the Raspberry Simple Syrup in Advance
