Strawberry Cold Foam

We just finished making strawberry jam, and I knew the first thing I wanted to make with it was some strawberry cold foam! It makes my strawberry lattes taste amazing, and I can’t stop making it.

As an added bonus, it comes together in a minute and uses a few ingredients.

What is Cold Foam?

Cold foam is a light, frothy topping made from aerated cream and milk, often used on cold drinks like iced coffee and cold brew. 

Traditionally, cold foam is made with a 3:2:1 ratio, which is 3 parts heavy cream, 2 parts milk, and 1 part sweetener. The sweetener can be a simple syrup, granulated sugar, brown sugar, or even powdered sugar.

But with the strawberry jam in this recipe, I’ve found I like using an equal ratio of heavy cream to milk. Otherwise, the cold foam gets too thick and doesn’t really blend into the drink over time.

How to Make Strawberry Cold Foam

To make cold foam, you need to be able to aerate the mixture. You can do this with either a milk frother or by shaking it in a sealable jar. I’ve made it both ways and prefer using a frother, but either will work. In a pinch, you can also use a blender!

Then you just add everything into the jar and mix it! Froth or shake until the mixture has increased in volume and all the ingredients are incorporated. It should look thick, but still be a pourable consistency.

Then pour on top of your favorite iced drink and enjoy! This recipe can be doubled or tripled as needed. However, I don’t recommend making it ahead of time, as it will lose its consistency.

Ingredient Swaps and Substitutions

If you don’t have these ingredients on hand, below are swaps and substitutions that can be made:

  • Heavy Cream: You need a decent amount of fat to give the cold foam that silky smooth, whipped texture. Heavy cream or heavy whipping cream(36% milk fat) works best. In a pinch, you can use 3 Tbsp of half and half in place of both the heavy cream and the milk, but the mixture will be thinner and won’t have the same consistency.
  • Milk: Any type of milk will work, skim, 2%, whole, oat, soy, etc. I find the nonfat and 2% froth the best, though!
  • Strawberry Jam: Use good-quality strawberry jam! It gives this cold foam all its flavor. You can also use freeze-dried strawberries or strawberry syrup in place of the strawberry jam.
  • Vanilla Extract or Vanilla Bean Paste: The vanilla enhances the flavor of the strawberry jam, but can be omitted if you don’t have any on hand.
  • Fine Salt: A tiny bit of salt helps enhance the flavor of the cold foam, but can be omitted if needed.

How Much Cold Foam Does This Recipe Make?

One batch makes enough cold foam to top one drink (about 1/2 cup once it’s frothed up).

Tips for Making the Best Strawberry Cold Foam

  • Make sure your milk and heavy cream are cold! They’ll whip up best straight out of the fridge.
  • Use good-quality vanilla and strawberry jam! It gives this cold foam all its flavor. I use homemade vanilla extract, but you can also use freeze-dried strawberries or strawberry syrup in place of the strawberry jam.
  • Make sure you whip or shake the cold foam until it’s the right consistency. You want it to be thick and creamy, but you should still be able to pour it out of the container onto your drink.

Equipment

Ingredients

  • 2 Tbsp heavy cream, cold 30g
  • 2 Tbsp milk of choice (I used nonfat fairlife), cold 30g
  • 1 Tbsp strawberry jam 6g
  • 1/4 tsp vanilla bean paste or extract 2g
  • pinch fine salt optional

Instructions

  • Into a tall glass or jar, add 2 Tbsp heavy cream, 2 Tbsp milk, 1 Tbsp strawberry jam, 1/4 tsp vanilla bean paste or vanilla extract, and a pinch of fine salt (optional). Froth or shake until the mixture has increased a bit in volume and all the ingredients are incorporated. It should look thicker, but still be a pourable consistency. The goal is to have it kind of partially melt into your drink as you sip it, so be careful not to overwhip it.
  • Then pour on top of your favorite iced drink and enjoy! This recipe can be doubled or tripled as needed. However, I don't recommend making it ahead of time, as it will lose its consistency.
