Pour 1 cup of water into a small saucepan. Heat over a medium-high heat until the water begins to boil.
Add in 1 cup of granulated sugar and stir continuously until the sugar is fully dissolved.
Add in the strawberries and turn the heat down to low and let the mixture simmer for about 20 minutes.
This step is optional, but at this stage I like to remove the pan from heat then mash the strawberries using a potato masher.
If I'm making this for drinks, I usually pour it through a fine mesh sieve. If I'm making this for pancakes or waffles, I simmer it for about 8 minutes to let it thicken up a bit and leave the bits of strawberry in there for more texture.
Pour into a medium-sized bowl to cool to room temperature, then cover and set aside.
If you're making this in advance, it can be stored in an airtight container in the fridge for up to 2 weeks.

Fresh vs Frozen Strawberries
You can use fresh or frozen strawberries to make this simple syrup. However, you may want to simmer the mixture a couple minutes longer if you use frozen berries as they add more moisture to simple syrup than fresh strawberries.
How to Store This Strawberry Simple Syrup
This recipe can be made in advance or leftovers can be stored in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 2 months.I usually keep mine in a mason jar but any container with a good lid should work just fine.
