Single Serve Peach Crisp
This single-serve peach crisp is the coziest little summer treat and is the perfect way to enjoy those juicy summer peaches!

Peach Filling
- 1 large peach - diced I like to use yellow peaches
- 1 Tbsp packed brown sugar
- 1 1/2 tsp lemon juice or water
- 1 1/2 tsp cornstarch
Peach Crisp Topping
- 1 1/2 Tbsp butter, cold
- 2 Tbsp rolled or quick oats (not steel cut oats)
- 1 Tbsp all-purpose flour or GF baking flour
- 1 Tbsp packed brown sugar
- pinch ground cinnamon
- pinch fine salt
Peach Filling
In a microwave-safe bowl or ramekin, add 1 large peach that's been diced (I also like to peel it, but this is optional) and 1 Tbsp packed brown sugar.
In a separate small bowl, make a cornstarch slurry by combining 1 1/2 tsp of water or lemon juice with 1 1/2 tsp cornstarch. Pour this into the peach mixture and stir until fully combined.
Place the bowl on a small plate to catch any peach juice that might bubble up and overflow, and to make it easier to handle when it's hot. Microwave the peaches in 30-second intervals, stirring between each interval. Repeat until the peach mixture has thickened and has a consistency similar to pie filling. We don't need to actually cook the peaches since they're already soft, but the heat helps activate the cornstarch and thicken the filling. This usually takes me about 1 minute total, but it will vary based on the power of your microwave and the type of container you use. At this point, I like to scoop the peaches into a ramekin to make it feel fancy, but that's optional!
Peach Crisp Topping
In a separate small bowl, melt 1 1/2 Tbsp of butter on medium power setting (you don't want it to explode as it melts - but I recommend covering the bowl too just to be safe). Add 2 Tbsp of oats, 1 Tbsp flour of your choice, 1 Tbsp packed brown sugar, a pinch of ground cinnamon, and a pinch of fine salt into the bowl with the butter and stir until combined. Spread this in an even layer on top of the peaches.
Place the bowl back on a small plate and heat it in the microwave for 90 seconds, then let it cool for a few minutes (I know it's hard to wait, but you will absolutely scald your mouth if you don't, trust me), then enjoy! I like to add a big scoop of ice cream on top before digging in.
You can reduce the amount of sugar in this recipe to match your preference! I like things on the sweeter side, but you can use half or even completely omit the brown sugar from the filling and/or topping if preferred.
This recipe can also be doubled if needed.
If you don't have a microwave, heat it in an oven-safe container that's preheated to 350 F/175 C for 20-25 minutes, or until the topping is crisp.
