Ingredients

Instant Pot Apple Butter

  • 4 pounds apples - cored and sliced about 1800g
  • 1/4 cup water or apple cider 60g
  • 1/2 cup packed brown sugar 100g
  • 2 tsp ground cinnamon 5g
  • 1/4 tsp fine salt 2g
  • 2 tsp vanilla extract or lemon juice - optional 8g

  • Thoroughly wash apples and remove any stickers. Cut the apples into fourths and remove the core.
  • Place 4 lbs of apple slices, 1/4 cup water, 1/2 brown sugar, 2 tsp ground cinnamon and 1/4 tsp salt into the instant pot.
  • Close and secure the lid to the locked position and turn the vent to the sealing setting.
  • Cook for 20 minutes at high pressure.
  • Once the apples are cooked, leave the lid on and let them sit for about 15 minutes to naturally allow the pressure to release.
  • Carefully turn the dial to the venting position and let any remaining steam escape.
  • To make the apple butter smooth puree the mixture with an immersion blender or a standard blender.
  • Saute the apple butter on low in the instant pot for 30-60 minutes, leaving it uncovered to help it thicken. Stir occasionally to avoid any big bubble ups/splattering.
  • Once the apple butter has thickened up, turn off your instant pot and stir in 2 tsp of vanilla extract (for apple butter with a sweeter note) or 2 tsp of lemon juice (for a tarter apple butter).
  • Pour the apple butter into mason jars or airtight containers. One batch makes 4-5 cups of apple butter, depending on how much you reduce it in step 8.
  • This apple butter will keep in the fridge for up a month or in the freezer for up to a year.

Using a Slow Cooker to Make this Apple Butter

If you don't have an instant pot, you can use a slow cooker to make this recipe!
  1. Cook the apples, water, brown sugar, cinnamon, and salt in a slow cooker on low for about 10 hours. Stir occasionally until the mixture has thickened and deepened in color.
  2. Uncover, stir in the vanilla, and continue cooking uncovered on low for about 2 hours.
  3. Use an immersion blender or blender to puree the apple butter until it's smooth.
