This Floradora cocktail is a delicious gin drink that is perfectly refreshing and balanced thanks to a splash of raspberry simple syrup and ginger beer.

Raspberry Simple Syrup
- 1 cup water 240g
- 1 cup granulated sugar 200g
- 1 cup raspberries, fresh or frozen 120g
Floradora
- 1/4 cup raspberries
- 2 oz. gin
- 1 oz. lime juice
- 1 oz. raspberry simple syrup recipe above
- 1 can ginger beer fever tree
Raspberry Simple Syrup
Pour 1 cup of water into a small saucepan. Heat over a medium-high heat until the water begins to boil.
Add in 1 cup of granulated sugar and stir continuously until the sugar is fully dissolved.
Add in the raspberries and turn the heat down to low and let the mixture simmer for about 5 minutes. Turn off the heat then mash the raspberries using a potato masher.
If I'm making this for drinks I usually pour it through a fine mesh sieve. If I'm making this for pancakes or waffles I simmer it for about 8 minutes to let it thicken up a bit and leave the bits of raspberries in there for more texture.
Pour into a medium-sized bowl to cool to room temperature, then cover and set aside.
If you're making this in advance, it can be stored in an airtight container in the fridge for up to 2 weeks.
Floradora Cocktail
In the base of a shaker muddle 1/4 cup of raspberries. This will help infuse the drink with an extra burst of raspberry flavor!
Into a shaker measure 2 oz. gin, 1 oz. lime juice, and 1 oz. raspberry simple syrup. Fill the rest of the way with ice. Secure the top and shake it for about 30 seconds to chill the liquid.
Fill a highball glass with ice. Strain the liquid into the glass.
Top the glass the rest of the way with ginger beer. Garnish with raspberries and enjoy!
How to Store This Raspberry Simple Syrup
This simple syrup can be made in advance or leftovers can be stored in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 2 months.
I usually keep mine in a mason jar but any container with a good lid should work just fine.
Raspberry Floradora Ingredients & Substitutions
- Raspberries - I love muddling raspberries in the shaker before building this drink but this is totally optional!
- Gin - The Floradora is similar to a Tom Collins, so gin is ideal. But feel free to substitute vodka or tequila to put a new twist on it.
- Lime Juice - Fresh lime is the key to bringing out the fresh fruity flavor of the drink! Fresh is always best but bottled is a great substitute.
- Raspberry Simple Syrup - I love using my recipe to make this simple syrup to create the perfect balance of sweet and tart.
