Blueberry Simple Syrup

This blueberry simple syrup is made using just 3 ingredients, and is amazing on pancakes, waffles, cakes, or in cocktails!!

Ingredients

Blueberry Simple Syrup

  • 1 cup water 240g
  • 1 cup granulated sugar 200g
  • 1 cup blueberries, fresh or frozen 190g
  • zest and juice of 1 small lemon

Instructions

Blueberry Simple Syrup

  • Pour the granulated sugar, water, blueberries and the zest and juice of 1 small lemon into a small saucepan.
  • Cook over medium heat, and stir continuously until the mixture just starts to boil. It usually takes about 3 minutes for my simple syrup to reach a boil.
  • Reduce the heat and allow the mixture to simmer for 5 more minutes. The blueberries should burst during this process. If I'm making this for drinks I usually simmer for about 5 minutes, and pour through a fine mesh sieve. If I'm making this for pancakes or waffles I usually simmer for about 8 minutes to let it thicken up a bit and leave the bits of blueberry in there for more texture.
  • Remove from heat. Pour into a separate container and cool to room temperature. I like to keep my simple syrup in mason jars for easy storage.
  • If you're making this in advance, it can be stored in an airtight container in the fridge for up to 2 weeks.

Fresh vs Frozen Blueberries

You can use fresh or frozen blueberries to make this simple syrup. However, you may want to simmer the mixture a couple minutes longer if you use frozen berries as they add more moisture to simple syrup than fresh blueberries.
