Banana Overnight Oats
- 1/2 cup mashed banana, about 1 small banana 125g
- 1/2 cup old fashioned or rolled oats 50g
- 1 Tbsp chia seeds 10g
- 1/2 tsp ground cinnamon 2g
- 2/3 cup water or milk of your choice 160g
- 1/4 cup plain Greek yogurt or dairy-free yogurt 55g
- 1/8 tsp fine salt >1g
Optional Topping:
- 1 Tbsp brown sugar or honey 10g
- 1 Tbsp chopped nuts 4g
- 1 Tbsp peanut butter or nut butter 16g
Mash 1 small banana in a bowl with the back of a fork.
Add 1/2 cup of mashed banana into the bottom of a mason jar or bowl.
Top with 1/2 cup rolled oats, 1 Tbsp chia seeds, 1/2 tsp ground cinnamon, 2/3 cup water, 1/4 cup greek yogurt, and a pinch of salt.
Give the oats a good stir to mix the ingredients together, then cover and refrigerate for at least 3 hours or overnight.
When you're ready to eat the oats, remove from the fridge. You’ll see that the oats absorbed a lot of the liquid, so you might want to add a little more water or milk of your choice before eating.
If desired, top with 1 Tbsp chopped nuts, 1 Tbsp brown sugar or honey, and a spoonful of peanut butter and enjoy cold!
These banana overnight oats keep in the fridge for up to 4 days.
