This week was a rough week. Despite my general inclination towards lighter treats and clean eating, this is a decadent recipe that I just couldn’t resist. Wednesday night I took my flexibility day at work, and got home BEFORE NINE! I was ecstatic. I gathered these ingredients and began:
- 2 1/8 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 3/4 cup browned butter (cooled)
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 large egg
- 1 large egg yolk
- 2 tsps vanilla extract
- 1 12oz bag M&M’s, divided
I preheated the oven to 325 degrees, and lined a 9X13-inch baking pan with foil (letting the excess hang over the edges of the pan by about 1 inch). I then sprayed the foil-lined pan with nonstick cooking spray, and in a separate pan I browned my butter by heating it on medium high for about 7 minutes.
Next I mixed the flour, salt, and baking soda together in medium bowl and them set aside. Then I whisked the melted browned butter and sugars in a large bowl until they were combined, and added the egg, egg yolk, and vanilla and mixed well. After that I folded the dry ingredients into the egg mixture until they were just combined (do NOT overmix).
The last step was folding in 1 cup of M&M’s and turning the batter into my prepared pan, and sprinkling remaining M&M’s on top (press them down slightly).
I baked the cookie bars until the top was a light golden brown, slightly firm to the touch, and the edges started pulling away from the sides of pan. It took about 25 minutes. I cooled them on a wire rack until they were room temperature. I then cut them into squares and packed them up for my team 😀
